Green Beans with Bacon

Ingredients

  • 1 pound green beans, trimmed and halved crosswise

  • 4 bacon slices

  • 1 (16 oz) bottle cocktail onions, drained (not pickled)

  • 2 tsp sugar

  • 1/2 tsp thyme

  • 1 1/2 Tbs vinegar (apple cider OR red wine)

  • 3/4 tsp salt

  • 1/4 tsp pepper

Directions

Cook beans in boiling water 4 minutes or until tender-crisp. Rinse with cold water, drain and pat dry.

Cook bacon, if using regular slices. Pour out all but 2 Tbs bacon drippings, add onions and cook for 3 minutes, stirring occasionally.

Add sugar and thyme to the onions and oil and cook 3 more minutes until onions are golden brown, stirring occasionally. 

Add beans, cook 2 minutes or until heated. Add vinegar, salt and pepper, toss to coat. Stir in crumbled bacon just before serving.
