Marshmallow Sauce

Ingredients

  • 1 cup sugar

  • ½ cup hot water

  • ½ cup light corn syrup

  • 2 egg whites, beaten stiff

  • 1 tsp vanilla

  • 1 tsp mayonnaise

  • ¼ tsp orange zest

  • Dash salt

  • ~1 Tbs cold water

  • Candy thermometer

Directions

Mix sugar, hot water and syrup in pan and stir to dissolve. Cook without stirring to 225˚.

Beat salt into egg whites. When stiff, slowly beat in half of hot syrup and beat 5 minutes.

Slowly beat in the rest of the syrup, vanilla, mayonnaise, zest and cold water. Beat another 5 minutes. 

Notes

Great with fresh fruit, and of course, on chocolate ice cream.
