King Ranch Casserole

Ingredients

  • 6 boneless, skinless chicken breasts, boiled and cut into pieces

  • 12 to 16 corn tortillas, torn into pieces

  • 1 large onion, chopped

  • 2 cups cheddar cheese, grated

  • 1 (10 3/4 oz) can cream of mushroom soup

  • 1 (10 3/4 oz) can cream of chicken soup

  • 1 (10 oz) can Rotel tomatoes with green chiles

Directions

Preheat oven to 350˚ F.

Spray 9x13” casserole dish.

Mix chicken, tortillas, onion and cheese together in a large bowl.

Add soups, tomatoes and chiles. Stir well and place in pan, top with extra cheese.

Bake for 45–60 minutes until heated through and bubbly.
