Luau Chicken

Ingredients

  • 4 to 6 boneless skinless chicken breast, pounded thinner

Marinade

  • 1 cup soy sauce

  • 1 cup teriyaki

  • 2 lemons, halved, juiced and zested

  • 1 Tbs garlic, pressed

  • 1 Tbs powdered ginger

  • ½ (12 oz) can Sprite

  • ½ bunch green onions

  • ¼ large bag of brown sugar

To serve: pineapple rings or chunks

Directions

Preheat oven to 350˚ F.

Mix marinade ingredients together and set aside. Poke some holes in chicken, put it with marinade in plastic bag for 8 hours or overnight. 

To cook, arrange chicken in 9x13” pan. Bake for 45 minutes.

Garnish with pineapple chunks.
