Ingredients

  • 5 cups cauliflower, chopped

  • 5 cups broccoli, chopped

  • 1 tsp salt

  • 1 cup good olive oil

  • 6 cloves garlic, pressed

  • 1 lb mushrooms, sliced

  • 2 tsp salt

  • ½ tsp red pepper flakes

  • 1 lb linguine

  • ⅓ cup grated Romano

Directions

Boil water in large pasta pot. Add salt, cauliflower and broccoli; cover and return to boil; about 5 minutes until tender-crisp. Remove veggies and set aside, reserve water to cook pasta. 

In a large saucepan saute garlic until brown. Then add mushrooms, 2 tsp salt and red pepper flakes and saute for 5 minutes. Cook pasta in saved water. Add cauliflower and broccoli to saucepan and saute 10 minutes.

When pasta is done add it to the saucepan and stir together. Place into serving dish and top with cheese.
