Shrimp & Sausage Penne

Ingredients

  • ½ pound ground mild Italian sausage

  • 1 ½ tsp garlic, minced

  • 1 Tbs shallots, minced

  • 1 tsp dried thyme

  • 1 (16 oz) can chopped tomatoes, juice reserved

  • ½ tsp Chinese chile paste

  • ⅓ cup Half & Half

  • 8 to 12 large shrimp, peeled, deveined, and cut in half length-wise

  • 8 ounces penne, cooked al dente and drained

  • ¼ cup fresh Parmesan cheese, grated

Directions

Preheat oven to 400˚ F.

Brown sausage in large skillet. Drain all but 1 Tbs fat and set sausage aside on paper towels to blot fat.

In the same skillet, cook garlic, shallots, and thyme for about 1 minute. Add the tomatoes and juice, chile paste, cream and sausage and simmer for 10 minutes. Add shrimp, cook on low stirring until pink, about 5 minutes. Add pasta and gently toss.

Pour into a large bowl, sprinkle with Parmesan and garnish with fresh thyme. Serve immediately.
