Pesto Chicken Fettuccine

Ingredients

  • 1 (12 oz) package fettuccine

  • 1 Tbs olive oil

  • 1 pound boneless chicken breasts, sliced into strips and seasoned with salt
    and fresh ground pepper

  • 1 (7 oz) jar roasted red peppers, drained and chopped

  • 1 ¼ cups light cream

  • ⅓ cup prepared pesto -OR- make your own

  • ½ tsp salt

  • Parmesan cheese, grated

Directions

Cook pasta as directed al dente.

Heat oil In a large skillet over medium heat, add chicken. Cook, stirring frequently, until chicken tis thoroughly cooked, about 5 minutes. 

Add roasted red pepper, cook 1 minute. Add cream and simmer until thickened, about 3 minutes. Remove from heat and stir in pesto and salt.

Add hot pasta and sauce, stir, top with cheese, and serve.
