Quiche Lorraine

Ingredients

  • 9” frozen ready-made crust or Mimi’s Flaky Pie Crust

  • 1/3 pound bacon 

  • 4 eggs

  • 1 1/2 cups cream

  • 3/4 tsp salt

  • 1/8 tsp nutmeg (Boo’s favorite!)

Directions

Preheat opven to 425˚ F.

Place crust in refrigerator for 30 minutes before cooking.

Fry bacon until crisp, crumble into bits once cooled. Cook onions in bacon drippings until soft, but not brown.

Beat eggs well and add all other ingredients except bacon and cheese. Sprinkle bacon and cheese on the bottom of pie crust. Pour egg mixture on top. 

Bake for 15 minutes at 425˚, then reduce heat to 300˚ for 40 minutes. Remove form oven and let rest for 5 minutes. Cut wedges and serve immediately.

Note

Cook right before eating.
