Æbelskievers (Danish Pancakes)

Ingredients

  • 2 cups buttermilk

  • 2 cups flour

  • 3 eggs separated

  • 1 tsp baking powder 

  • 1/2 tsp salt

  • 1 tsp soda

  • 2 Tbs sugar

  • Abelskiever pan

For serving: Butter, syrup, applesauce, jelly and powdered sugar

Directions

Sift together flour, soda and salt and set aside. 

Beat egg yolks, add sugar, salt and milk, then add flour mixture. Beat egg whites to stiff peaks, fold into mixture.

Heat abelskiever pan, add a small amount of oil or shortening to each cup and fill two-thirds full with batter.

At this point you can fill the center with about a tsp of applesauce or jelly then cover with another bit of batter. (Mom never did so why bother)

Once cooked, turn pillows to cook on the other side. 

Notes

We cant make these fast enough before they get eaten. Need 3 or so pans going at once.
