Raisin Filled Cookies

Ingredients
2 cups dates, figs or raisins chopped (Mom uses raisins)
3/4 cup sugar
3/4 cup water
1/2 cup walnuts OR pecans, chopped (opt)
Cook filling ingredients together slowly, stirring until thickened. Set aside and allow to cool. Sift together flour, soda and salt and set aside.
Dough
1/2 cup soft shortening
1 cup sugar
2 eggs
2 Tbs cream OR milk
1 tsp vanilla
Directions
Preheat oven to 400˚ F.
Mix together shortening and sugar, after combined mix in eggs.
Stir in milk and vanilla, then flour mixture. Place covered in refrigerator to chill.
Roll dough thin. Cut in 3” rounds and place lightly on a cookie sheet. Place one rounded tsp of filling on each and top with another cookie round. Press edges together with fork tines. Bake for 8–10 minutes.
