Lemon Sugar Cookies
Recipe from Aunt Evelyn
Ingredients
2 eggs, slightly beaten
2/3 cup oil
2 tsp vanilla
2 to 3 tsp lemon zest
3/4 cup sugar
2 cups flour
2 tsp baking powder
1/2 tsp salt
Edible lavender petals (opt)
Directions
Preheat oven to 350˚ F.
Stir together eggs, oil, vanilla and zest. Blend in sugar.
Sift dry ingredients together then mix in. Add lavender.
Drop by tsp 2” apart on ungreased cookie sheet. Flatten with glass bottom that has been greased and dipped in sugar.
Bake for 8–10 minutes until delicately brown. Remove immediately from pan.
