Avocado Feta Dip

Recipe from Kiki (Sonie Stephens)

Ingredients

  • 2 ripe Haas avocados, fleshed and diced

  • 4 oz feta cheese, cubed

  • 3 medium Roma tomatoes, seeded and diced

  • ⅓ cup red onion, diced

  • 2 cloves garlic, minced

  • ½ cup cilantro or Italian parsely, chopped

  • 1 Tbs olive oil

  • 1 Tbs apple cider or white vinegar

  • ½ tsp salt

Directions

In a bowl combine all the ingredients except the avocado. Stir to combine. Cover and refrigerate for several hours (or overnight if you prefer).

Just before serving, add chopped avocado. Stir.

Serve with tortilla chips or crackers.
