Mashed Potatoes

Ingredients
4 large Russet potatoes, peeled (if desired) and cut into large chunks
4 Tbs butter (measure with your heart)
½-¾ cup milk of choice (whole, skim, buttermilk, cream), warmed
2 scallions, white and green parts chopped -OR- 2 Tbs chives, chopped
Salt and pepper to taste
Reserved potato water if needed for texture
Directions
Get a large pot full of boiling, well-salted water (2-3 Tbs Kosher, 1-2 Tbs table). Add potatoes and cook until fork soft and staerting to fall apart, ~15-20 min.
Remove potatoes to bowl, add butter, milk, onions and salt and pepper.
Mash until smooth. Don’t over mash or stir, they’ll get sticky instead of smooth (stirring releases too much starch).
Add more butter, salt and pepper to taste.
Note
By salting the water very well, the potatoes have a good salt start. Taste before adding more salt, you likely won’t need as much after they are mashed.
Add garlic if you like, start small amount and taste. Garlic is a big flavor, potatoes aren’t.
