Kiki’s Brussels Sprouts

Recipe from Kiki (Eva’s)

Ingredients

  • 1 lb Brussels sprouts, shredded (a mandolin works best)

  • 2 Tbs oil

  • 2 Tbs butter (measure with your heart)

  • 1-2 cloves garlic

  • ½ c dried cranberries, roughly chopped (opt)

  • ½ c macadamia nuts or similar, roughly chopped (opt)

  • 1-2 Tbs apple cider vinegar

  • Pat butter to finish

  • Salt to taste 

Directions

In a large saucepan over medium heat, melt oil and butter. Add garlic and stir (don’t let garlic brown). Add in Brussels sprouts: saute and stir until they become bright green (3-5 min). Add in fruit and nuts. 

Remove from heat, add vinegar, and stir to coat. Add an additional pat of butter to mellow the vinegar and stir. Add salt and pepper as desired. When in doubt, add more butter :)
