Fajita Marinade

Recipe from Kiki (The Joy of Cooking)

Ingredients

For 1 pound of meat. Can be used with 1 lb steak (marinate 12-24 hrs), 1 lb chicken (marinate 6-12 hrs), or 1 lb shrimp (marinate 1-2 hrs).

  • ¼ cup lime juice (about 1 ½ limes)

  • 2 scallions

  • 3 cloves garlic

  • 3 Tbs fresh cilantro, minced

  • 1 Tbs vegetable oil

  • ½ tsp red pepper flakes

  • ¼ tsp cumin

Directions

Mix all ingredients and spoon on top of meat.

Marinade 1 lb of steak and chicken for 12–24 hours, marinade 1 lb of shrimp for 1–2 hours.

Cook to desired doneness.
