Basil Pesto

Recipe from Kiki (Ina Garten)

Ingredients

  • 1 cup fresh basil leaves

  • 1 cup spinach leaves

  • 2 Tbs garlic, minced

  • ¼ cup pine nuts

  • ¼ cup Parmesan or Romano, grated

  • ½ tsp salt

  • ¼ tsp ground black pepper

  • ½ cup olive oil

  • ½ cup vegetable oil

Directions

In a food processor, place clean dry basil, spinach, garlic, pine nuts, cheese, salt and pepper. Pulse 5 to 6 times to chop leaves.

With motor running low, add oils in a slow stream. Mix until creamy. Add more salt if necessary.

Great on chicken, pizza, pasta, bread, and sandwiches
