La Scala Salad

Recipe from Boo

Ingredients

  • 2 cups iceberg lettuce, chopped

  • 1 baby cucumber, chopped

  • Few slices salami ( I used spicy salami), chopped

  • 1/4 cup shredded mozzarella cheese

  • ½ cup chickpeas

  • Sriracha to taste

Add ons

  • ¼ cup chopped sun-dried tomatoes

  • ¼ cup chopped artichoke hearts

  • Diced chicken breast

Dressing

  • 2 tbsp extra virgin olive oil

  • 1.5 tbsp red wine vinegar

  • 2 tsp dijon mustard

  • Salt & pepper

  • 2 tbsp grated Pecorino Romano (optional)

Directions

In a bowl add the lettuce, cucumber, salami and cheese.

Whisk dressing ingredients together.

Add chickpeas to a small bowl and top with  ½ the dressing. Add remaining dressing to the salad and toss.

In a small bowl add the chickpeas and then pack in the salad.
