Irish Pork Chops

Recipe from Kiki (Cooking Light)

Ingredients

  • 4 (6 oz) bone-in, center-cut pork chops, trimmed

  • ¼ tsp salt

  • ⅛ tsp black pepper

  • 1 tsp olive oil

  • ½ cup chopped onion

  • 8 oz sliced fresh mushrooms

  • ½ cup whiskey -OR- ½ cup beef broth + splash of red wine vinegar

Sauce

  • ⅔ cup fat-free sour cream

  • ½ cup water

  • 2 Tbs flour

  • ½ tsp salt

  • ½ tsp dried rubbed sage

  • ¼ tsp black pepper

Directions

Preheat oven to 300°.

Combine the sauce ingredients in a small bowl. Set aside.

Sprinkle pork with salt and pepper. Let sit for 30-60 mins.

Heat the oil in a large oven safe pan over medium-high heat. Add pork; sauté 5 minutes on each side or until golden. Remove pork from pan and set aside.

Add onion and mushrooms to pan; sauté for 3 minutes. Carefully add whiskey/broth to pan; cook for 1 minute or until liquid almost evaporates. Stir sauce mixture into pan. Return pork to pan; spoon sauce over pork.

Cover and cook for 1 hour. Serve immediately with Mashed Potatoes
