Aunt Evelyn’s Waffles

Recipe from Aunt Evelyn

Ingredients

  • 1 cup sifted flour

  • 1 tsp sugar

  • 1 egg, beaten

  • 1 ⅓ cup buttermilk* (see below)

  • 1 ½ tsp baking powder

  • 1 ½ tsp baking soda

  • ½ tsp salt

  • 3 Tbs oil

Directions

Sift dry ingredients together. Add buttermilk to beaten egg, then dry ingredients, then the oil. 

If batter is a little stiff, add a bit more buttermilk. Spray waffle iron with baking spray and cook.

*To make buttermilk, use just shy of 1 ⅓ cup 2% or whole milk. Stir in 1 Tbs + 1 tsp white vinegar or lemon juice and let sit for 5-10 minutes at room temperature. The milk will thicken and begin to curdle. Use in recipe.

Note

Grandkids love it with Jocelyn’s Coconut Syrup, which also uses buttermilk.
