King Crab Legs
Recipe from Kiki & Boo
Ingredients
Large stock pot
Steamer basket/tray
King Crab legs
Water
1-2 lemons. quartered
2 Tbs Old Bay
1 bunch tarragon
1 (12 oz) beer or cider
For serving: clarified butter (remove milk solids) or Ghee, tools of destruction.
Directions
The best way to boil crab legs is to steam them using a stockpot. King crab legs are long, the entire length of them can be immersed inside a Dutch oven or tall pot. Bend them to fit them. Fill the pot low and add a steamer basket/tray that sits above the water.
Add seasoning to the water: lemon, Old Bay, tarragon, beer depending on what you have. It will lightly affect the crab flavor.
Cover the pot and turn on the heat. Once steaming, the cook time is short. The crab is already cooked, so all you need to do is reheat them. If thawed, cook 5-7 min; if frozen, cook 10 min.
Use tools to remove the meat inside.
Dip pieces of the crab meat into melted butter and enjoy.
Note
Add seasonings to 1/2 c clarified butter
Herb: Add 1 tablespoon chopped fresh herb (chives, oregano, tarragon, or thyme) and 1 teaspoon lemon juice.
Garlic: 1/2 teaspoon paprika, 1/8 teaspoon pepper and 2 finely chopped garlic cloves
