Peach & Blueberry Cobbler

Recipe from Mimi (Betty Crocker)

Ingredients

  • 1 Tbs cornstarch

  • 1/4 cup brown sugar

  • 1/2 cup cold water

  • 2 cups peaches, sliced and sugared

  • 1 cup blueberries

  • 1 Tbs butter

  • 1 Tbs lemon juice

For serving: Vanilla bean ice cream or whipping cream

Topping

  • 1 cup sifted all purpose flour

  • 1/2 cup sugar

  • 1 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1/2 cup milk

  • 1/4 cup butter, softened

  • 2 Tbs sugar

  • 1/4 tsp nutmeg

Directions

Preheat overn to 350˚ F.

In a saucepan, mix cornstarch, brown sugar water, and fruits. Cook and stir mixture until it thickens. Add 1 Tbs butter and lemon juice.

Pour into a 9x13” baking dish.

Sift dry ingredients together. Add milk and butter all at once, beat smooth. Pour over fruit. Sprinkle 2 Tbs sugar and nutmeg over batter. Bake at 350˚ for 30 minutes. 

Serve with whipped cream, ice cream or Vanilla Sauce (page 199).
