Mint Chocolate Brownies

Ingredients

  • 1/2 cup butter, melted

  • 1 1/2 cup graham crackers, crushed

  • 1 cup walnuts, coarsely chopped

  • 1 cup semi-sweet chocolate chips

  • 1 1/3 cup coconut

  • 1 (15 oz) can sweetened condensed milk

Brownie layer

  • 1 box Fudge Brownie Mix

  • 1/2 cup water

  • 1/2 cup oil

  • 1 egg

Mint layer

  • 1/2 cup margarine OR butter, softened

  • 3 ounces cream cheese, softened

  • 21/2 cups powdered sugar

  • 3 Tbs Crème de Menthe syrup OR 3 tsp mint extract

  • Green food coloring (opt)

Chocolate layer

  • 1 cup semi-sweet chocolate chips

  • 1/3 cup margarine

  • 1 tsp mint extract (opt)

Directions

Preheat oven to 350˚ F.

Brownie

In a large bowl, combine all brownie ingredients; beat 50 strokes with a spoon. Grease bottom only of 9x13” pan. Spread batter in pan. Bake for 33–35 minutes until brownies are set. DO NOT OVERBAKE. Cool completely.

Mint

In a medium bowl, combine margarine, cream cheese and beat until light and fluffy.

Add sugar, syrup and food coloring, beat until smooth. Spread evenly over cooled bars.

Chocolate

In a small saucepan, melt chocolate and margarine over low heat until smooth, stirring constantly.

Remove from heat and let cool for 15 minutes.

Pour frosting evenly over mint filling, spread carefully to cover. 

Chill 1 hour before cutting. Cover and store in refrigerator.
