Chicken & Wild Rice Soup

Ingredients
1 yellow onion, chopped
1-2 Tbs. olive oil
½ stick butter
3 large carrots, chopped
4 celery stalks, chopped
1 c mushrooms, chopped
1 ½ c long grain and wild rice
12+ c veggie or chicken stock
1 Tbs fresh parsley, chopped or 1 tsp dried
1 tsp fresh tarragon, chopped or 1/4 tsp dried
1 tsp fresh thyme, chopped or 1/4 tsp dried
4 breasts chicken, cooked and shredded or diced
1 c Half & Half or cream
Salt & pepper to taste
Directions
Sauté the onion in olive oil until translucent. Add butter and veggies, salt and continue sautéing.
Add in rice, stock, herbs, and chicken. Bring to a boil.
Reduce to simmer and cook for 30 mins until rice is cooked.
Add cream, stir, and serve.
