Steak in a Bag

Ingredients

  • 2 to 3 pound top sirloin, cut 2 to 2 ½” thick (for 4, 1 ½ pounds for 2 people)

  • 1 cup soft bread crumbs

  • 4 Tbs softened butter

  • 4 Tbs oil

  • 1 tsp garlic, crushed

  • 1 cup shredded sharp cheddar

  • 2 tsp seasoned salt

  • 2 tsp seasoned pepper OR black pepper

  • Large brown paper grocery bag (see advisory below)

Directions

Preheat oven to 375˚ F.

Remove excess fat from steak. Mix butter, oil, garlic, salt and pepper in bowl - dredge meat. Put bread in blender to break it up. Mix crumbs and cheese together, press into butter mixture on all sides of meat, coating the steak well. Place steak in brown paper bag, fold over top, staple shut. Place the bag on a cookie sheet. (Place in refrigerator until ready, but bring to room temperature before cooking). 

Put cookie sheet and bag in oven for 30 minutes at 375˚ F. Increase temperature to 425˚ F for 15 minutes. Decrease temperature to 350˚ F for 5 minutes.

Remove from oven, take out of bag, and let rest for 10-15 minutes before serving.

Note

While recipes for "steak in a brown paper bag" exist, food safety experts strongly advise against this method. Ordinary brown grocery bags are not designed for cooking and can pose fire hazards and release harmful chemicals, glues, and inks into the food when heated in an oven. 

For safe and effective cooking in a bag, you should use an oven-safe nylon roasting bag or a certified food-grade sous vide bag.
