Scottsdale Guacamole

Recipe from Mimi (Claire Bear Bites)

Ingredients

  • 4 large Haas avocados ripe, diced

  • 1 can mandarin orange slices, drained

  • 1 cup pomegranate arils, divided

  • ½ cup cilantro chopped

  • ¼ large red onion, finely chopped

  • 1 clove garlic, minced

  • ½-1 tsp salt

  • pinch of black pepper

  • 1 Tbs orange, juiced

  • 1 ½ limes, juiced

  • 1 jalapeño pepper seeds removed, finely diced

For serving: Corn chips

Directions

Start by mashing the avocado with the lime juice, sumo citrus juice, salt and pepper with a masher or fork until you reach your desired consistency.

Next, add the diced citrus (saving a few pieces for garnish) 3/4 cup of the pomegranate arils, jalapeño, cilantro, garlic, and onion and mix well.

Scoop the guacamole into a serving bowl and top with the remaining pomegranate arils, extra sumo citrus pieces and cilantro.

Serve with tortilla chips or veggies.
