Chipotle Hummus

Ingredients

  • 1 can garbanzo beans, 1/2 drained not rinsed

  • 2 Tbs lemon juice

  • 2 Tbs olive oil

  • 2 Tbs tahini

  • 1 Chipotle pepper in Adobo sauce

  • ½ tsp cumin

  • 1 clove garlic, minced

  • ½ tsp salt

Top with paprika and scallions

For serving: Corn chips, crackers, veggies.

Directions

Mix all together in a blender and chill until ready to serve.

Note

Have fresh chopped tomatoes on the side to take with each bite. If you add it directly on the hummus it gets watery.
