Cream of Broccoli Soup

Ingredients

  • 1 pound fresh broccoli

  • ½ cup onion, finely chopped

  • 6 Tbs butter

  • ¼ heaping cup flour

  • Salt and pepper

  • 1 quart Half & Half -OR- 3 cups milk with 1 cup cream

  • 2 cups chicken broth

  • Dash ground nutmeg

Directions

In a large stock pot, cook onion and broccoli in broth until tender. Drain off water and reserve. 

In same pot, mix butter and flour to make a roux base for cream sauce.

Add cream. Stir in broccoli, onions and broth. Season with salt, pepper, and nutmeg.
