Chicken & Wild Rice Soup

Ingredients

  • 1 yellow onion, chopped

  • 1-2 Tbs olive oil

  • ½ stick butter

  • 3 large carrots, chopped

  • 4 celery stalks, chopped

  • 1 cup mushrooms, chopped

  • 1 ½ cups long grain and wild rice

  • 12+ cups chicken stock

  • 1 Tbs fresh parsley, chopped or 1 tsp dried

  • 1 tsp fresh tarragon, chopped or 1/4 tsp dried

  • 1 tsp fresh thyme, chopped or 1/4 tsp dried

  • 4 breasts chicken, cooked and shredded or diced

  • 1 cup Half & Half or cream

  • Salt & pepper to taste

Directions

Sauté the onion in olive oil until translucent. Add butter and veggies, salt and continue sautéing.

Add in rice, stock, herbs, and chicken. Bring to a boil.

Reduce to simmer and cook for 30 mins until rice is cooked.

Add cream, stir, and serve.
