Greek Salad

Ingredients

  • 2 Roma tomatoes, chopped

  • 1 English cucumber, chopped

  • ½ red pepper, chopped

  • ½ medium red onion, chopped

  • ½ cup feta cheese (this is a good amount to start with, you can add more from there)

  • ½ cup whole Kalamata olives, whole or roughly chopped

  • Pepperocinis, sliced

  • Any oil & vinegar dressing: Italian, Balsamic or Greek dressing

  • Grilled seasoned chicken, sliced (opt)

Directions

Slice cucumbers as thinly as possible by hand or using a mandolin (about 1/16-in thick). Place cucumber slices in a colander and sprinkle with salt; let drain for about 20 minutes. Rinse with cold water, then press out excess liquid removing seeds.

Transfer cucumber slices to a large bowl along with remaining vegetables and feta together in a large bowl. Add dressing just before serving and toss again.

To make it a meal serve with sliced warm breast of chicken on top.
