Erin’s (Cobb) Salad
Recipe from Jocelyn (Brecken)
Ingredients
1 to 3 Romaine lettuce hearts
1 avocado, sliced
4 strips of bacon, cooked and crumbled
1 cup Bleu cheese, crumbled
1 cup Sugared Pecans
2 eggs, boiled and chopped
1 chicken breast, cooked and diced
Dressing
¼ cup oil
3 Tbs red wine vinegar
2 Tbs sugar
½ tsp dijon mustard
½ tsp garlic powder
¼ tsp salt
¼ tsp pepper
Directions
Salad: Mix all ingredients together.
Dressing: Blend all ingredients together.
Toss dressing and avocado on salad just before serving.
