Erin’s Cobb Salad

Recipe from Jocelyn (Brecken)

Ingredients

  • 1 to 3 Romaine lettuce hearts

  • 1 avocado, sliced

  • 4 strips of bacon, cooked and crumbled

  • 1 cup Bleu cheese, crumbled

  • 1 cup sugared pecans

  • 2 eggs, boiled and chopped

  • 1 chicken breast, cooked and diced

Dressing

  • 1/4 cup oil

  • 3 Tbs red wine vinegar

  • 2 Tbs sugar

  • 1/2 tsp dijon mustard

  • 1/2 tsp garlic powder

  • 1/4 tsp salt

  • 1/4 tsp pepper

Directions

Salad: Mix all ingredients together.

Dressing: Blend all ingredients together. 

Toss dressing and avocado on salad just before serving.
