Cashew Chicken

Ingredients

  • 1/2 pound chicken breast, cubed

  • 2 Tbs peanut oil

Marinade

  • 1/4 tsp salt

  • 1/4 tsp pepper

  • 1/4 tsp sugar

  • 1 Tbs oyster sauce

  • 1 Tbs cornstarch, heaping

  • 1/2 cup onion, chopped

  • 2 carrots, chopped

  • 1/2 cup cashews

Seasoning Sauce

  • 1 Tbs soy sauce

  • 2 tsp sesame oil

  • 2 tsp rice vinegar

  • 1/4 tsp cornstarch

  • 1/4 tsp ground pepper

Directions

Mix marinade together, marinate meat for 5 minutes or more. 

Add 1 Tbs oil to wok on high heat. When smoking add chicken, stir fry until done and remove from wok.

Add another Tbs oil and cook all veggies till tender crisp.

Add in cooked chicken and cashews. Mix in seasoning sauce well. Turn down heat and allow to heat through.

Serve with rice.
