Mimi’s Flaky Pie Crust

Ingredients

  • 2 cups flour

  • 1 tsp salt

  • ¼ cup water

  • ⅔ cup shortening or butter

Directions

Preheat oven to 400˚ F.

Sift flour and salt together. Remove 1/3 cup and mix to a paste with water.

Cut fat into remaining flour until particles are the size of small peas.

Stir in flour paste into mixture to make dough. Form into two balls, roll into circles for pie.

Makes one large two-crust pie.

From Mom’s U of U Foods 41 class in 1967. She was getting married later that year and didn’t think she knew how to cook. At that point she must not have realized it was in her blood. Funny.
