Scampi e Fagoli

Ingredients

  • 1 (15 oz) can cannellini beans, slightly drained

  • 3 fresh sage leaves minced or ¼ tsp dried sage

  • Red pepper flakes, to taste (opt)

  • 1 Tbs olive oil

  • 1 clove garlic, minced

  • ½ lb shrimp, thawed, peeled, deveined, and tail off

  • ¼ tsp sea salt

  • Bunch of arugula

For serving: Parmesan cheese

Dressing

  • 1 Tbs lemon juice

  • 3 Tbs olive oil

  • Salt and pepper

Directions

Beans: Place in a medium saucepan over medium heat. Add cannellini beans, sage, red pepper flakes, and salt. Heat until bubbly. Reduce heat to low, cover and simmer for 10 minutes.

Shrimp: Meanwhile, prepare the prawns, heat oil and garlic in a pan. Add prawns and salt. Sauté on each side until done, approximately 7 mins.

In a small bowl, whisk the dressing ingredients until thoroughly mixed.

Serve with a bunch of arugula, a helping of beans and shrimp.

Top with dressing and Parmesan.
