Ingredients

  • ½ lb shrimp, thawed, peeled, deveined, and tail off

  • 1 (15 oz) can cannellini beans

  • ½ tsp dried sage

  • Red pepper flakes, to taste (opt)

  • 1 Tbs olive oil

  • ½ tsp jarred garlic

  • ¼ tsp sea salt

  • Bunch of arugula

For serving: Parmesan cheese

Dressing

  • 2 Tbs lemon juice

  • 5 Tbs olive oil

  • ½ tsp honey

  • ¼ tsp jarred garlic

  • Salt and pepper

Directions

Dressing

In a small bowl, whisk the dressing ingredients until thoroughly mixed.

Beans

Place in a medium saucepan over medium heat. Add cannellini beans, sage, red pepper flakes, and salt. Heat until bubbly. Reduce heat to low and simmer for 10 minutes.

Shrimp

Wash and pat shrimp dry. Salt and peper. Heat oil and ½ tsp garlic in a pan. Once hot add shrimp and cook about 3 minutes on each side.

Serve

Serve with a bunch of arugula, a helping of beans and shrimp.

Top with dressing and Parmesan.
