Vegetable Beef Soup

Recipe from Mimi (Ilene Sauage)

Ingredients

  • 2 Tbs oil

  • 1 ½ lbs top sirloin beef, cubed

  • 2 cups carrots, chopped

  • 2 cups celery, chopped

  • 2 cups onion, chopped

  • 2 cups green beans, chopped

  • 1 cup frozen green peas

  • 2 cups potatoes, cubed

  • 1 (30 oz) can tomatoes

  • 1 can tomato soup (opt: add if you like a sweetness to your soup)

  • 8 cups water + 2 beef bullion cubes -OR- 8 cups beef stock

  • ⅓ cup rice -OR- barley

  • 2 tsp seasoned salt

  • 1 Tbs sugar

  • 1 Tbs Worcestershire sauce

Directions

When chopping: make the beef, carrot, and potato approx the same size.

Brown meat in oil in a large stock pot then remove from pan.

Add in carrots, celery, and onion. Sauté until onions are translucent. Add in meat and the rest of the ingredients. Simmer for 30 mins until rice is done.
