Cream of Broccoli Soup

Ingredients

  • 1 pound fresh broccoli

  • ½ cup onion, finely chopped

  • 6 Tbs butter

  • 4 heaping Tbs flour

  • Salt and pepper

  • 1 quart Half & Half -OR- 3 cups milk with 1 cup cream

  • 2 cups chicken broth

  • ⅛ tsp ground nutmeg

Directions

In a large stock pot, cook onion and broccoli in broth until tender. Drain off water and reserve. 

In same pot, mix butter and flour to give base for cream sauce. Add cream.

Stir in broccoli, onions and broth. Season and sprinkle with nutmeg.
