Butternut Squash Soup

Recipe from Kiki & Boo (Giada de Laurentis)

Ingredients

  • 1 medium-large butternut squash, peeled and cut into 1” cubes

  • 3 Tbs olive oil

  • 2 cloves garlic

  • 1 ½ c chicken or vegetable stock

  • 2 c milk

  • ½ c grated parmesan

For serving: fresh basil and grated parmesan

Directions

In a large pan, add olive oil until hot, then add squash, salt and pepper. Cook until soft about 15-20 mins. Then add garlic and stock and cook for 5 more minutes stirring often.

Transfer to blender and add milk and cheese. Blend until smooth.

Top with more parmesan and fresh basil.
