The Best Corn Bread

Ingredients

  • 4 eggs

  • 1 cup sugar

  • 1 cup butter

  • ½ cup Monterrey Jack cheese, grated

  • ½ cup Cheddar cheese, grated 

  • 1 (4 oz) can chopped green chiles

  • 1 can creamed corn

  • 1 cup white flour

  • 1 cup cornmeal (fresh ground is best)

  • 4 tsp baking powder

  • ¼ tsp salt

Directions

Preheat oven to 350˚ F.

Cream together eggs, sugar and butter. Add all remaining ingredients and mix gently until batter is well blended.

Pour into 9x13” pan. Put in oven and reduce heat to 300˚. Bake at 50–60 minutes.
